Step 1) Preheat your oven to 350 degrees. Spray the bottom and sides of a round cake pan with a cooking/baking spray like SPAM. Using a large bowl mix together the oil, 1 egg, lemon peel, vanilla extract and graham crackers with an electric mixer on low speed until crumbly. When mix is crumbly press into round cake pan for crust.
Step 2) In the same large bowl, beat the cream cheese, sugar, lemon pudding and sour cream with mixer on medium speed until the contents are smooth and creamy. Beat in 3 eggs, slowly and one at a time, until mixed. Then simply pour over crust and bake at 350 degrees for 20-30 minutes.
Step 3) Remove cheesecake from oven; place it carefully on cooling rack. Without releasing the side of your cake pan, run a knife around the edges of the pan to loosen cheesecake. Cool in pan on cooling rack for 30-40 minutes. Cover loosely; place in refrigerator 4 hours or as desired. Top your cheesecake of with grated lemon peel and or whip cream and enjoy.
