- • 2-3 cups granulated sugar
- • 12 tablespoons unsalted butter
- • 2 eggs
- • 2-3 cups light brown sugar
- • 1 cup buttermilk, shaken
- • 2 teaspoons vanilla extract
- • ½ cup sour cream (room temperature)
- • 1 3/4th cup all purpose flour
- • 2 tablespoons brewed coffee
- • ½ teaspoon kosher salt
- • ½ teaspoon baking soda
- • Crushed peanuts
- For the peanut butter icing:
- • 1 cup creamy peanut butter
- • 1 cup confectioners' sugar
- • 5 tablespoons unsalted butter
- • 1/4 teaspoon kosher salt
- • 3/4 teaspoon vanilla extract
- • 1/3 cup heavy cream
Chocolate cupcakes and peanut butter icing have always been a favorite amongst not just kids, but for adults with a sweet tooth as well! Try making these yummy cupcakes yourself by following this simple recipe given below. This recipe would dish out 14 to 15 cup cakes and total preparation time is of around 50 minutes.
Instructions:
For the chocolate cupcake:
Step 1- Line cupcake pans with paper liners
Step 2- Preheat the oven to 350 degrees F
Step 3- Cream the butter, granulated sugar and light brown sugar for about 5 minutes in an electric mixer fitted with a paddle attachment till it is fluffy and light
Step 4- Reduce the speed to medium and add in the vanilla extract and eggs 1 at a time and mix well
Step 5- Whisk together the sour cream buttermilk and coffee in a separate bowl
Step 6- Take another bowl and sift together the baking soda, cocoa, flour and salt
Step 7- Add the flour mixture and buttermilk mixture alternately in thirds to the mixer bowl on low speed. Add the buttermilk mixture first and then add in the flour mixture
Mix till all the ingredients are blended
• Take a rubber spatula and fold the batter so that it gets blended well
• Divide the batter in the cupcake pans and place them in the middle of the oven to be baked for 20 — 25 minutes till the time that a toothpick comes out clean
• Cool the cupcakes for 10 minutes and then remove them from the pans. Let them cool completely before adding on the icing
• Frost the cupcakes with peanut butter icing and top them off with crushed peanuts
For the peanut butter icing:
• Take an electric mixer that has a paddle attachment and put in the peanut butter, confectioners sugar, vanilla extract, unsalted butter and salt
• Mix all of these ingredients on medium to low speed till it gets creamy
• Add in the heavy cream and beat on high speed till the mixture becomes smooth and light
