Spaghetti Bilbao-Style

Sundried-tomato and basil sauce. Sounds yummy? I know. So here’s how
it’s made:
What you need:
pasta (preferably spaghetti)
sundried tomatoes
olive oil
garlic
shallots
basil
tomato sauce
tomato paste
chorizo de bilbao
parmesan cheese
If you have the sun-dried tomatoes dried, soak them first in hot water
to reconstitute moisture. Simply julienne them if you bought them
bottled in oil. Cook pasta until al dente while grilling the sausages.
Heat up pan with olive oil. Saute shallots and garlic. Add a little
tomato paste and roast briefly. Add the tomato sauce and bring to a
simmer while stirring every once in a while. If it gets too thick, add
water. Place the grilled sausages into the sauce and finish it with
julienned basil.
Toss the spaghetti noodles with the finished sauce. Put it on a nice
plate and sprinkle a generous amount of parmesan cheese. Garnish with
some basil leaves and serve.
