Paksiw na Pata is also known for bringing out the real flavors of pork. The meat is cooked till tender and its fat turns into a gelatin-like thick texture which gives it a more succulent flavor. Unlike Pata tim which uses the whole pig’s leg, Paksiw na Pata uses only the front section of the leg.
However, those suffering from a high blood pressure and increased cholesterol should avoid this dish.
Step 1 – Pour water in the pot and bring it to boil.
Step 2 – Put the whole pepper corn and dried bay leaves into the water.
Step 3 – Add the soy sauce and garlic and bring them to boil.
Step 4 – Put the sliced pork leg and let it simmer for about an hour. Alternately, you can pressure cook for 35 minutes.
Step 5 – Pour the vinegar and let the dish simmer for 15 minutes.
Step 6 – Put the banana blossoms and let them simmer for 5 minutes.
Step 7 – Add some brown sugar and salt and let them simmer for 2 minutes.
Step 8 – Serve hot.
You can serve 4 bowls of this sumptuous dish with rice. It will take around 2 hours for you to prepare this pork dish.
