Ingredients

  • 1 1/2 pounds potatoes, cut into cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 1/2 cups sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg
  • 2 tablespoons fresh parsley, chopped
  • 1 cup bacon, cooked and chopped
  • 1 cup mozzarella, shredded
  • 1 cup cheddar, shredded
  • Sliced green onions, for garnish

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a baking tray, combine potatoes, olive oil, pepper, and salt. Stir to combine. Cover with aluminum foil and bake for 45 minutes.
  3. In a bowl, combine sour cream, garlic powder, onion powder, nutmeg, and parsley. Stir to combine.
  4. Remove potatoes from the oven and layer with sour cream mixture, bacon, mozzarella, and cheddar.
  5. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 10 minutes.
