Spring Bone Broth Orzo

Ingredients

  • 1 tablespoon olive oil
  • 2 onions, finely diced
  • 2 garlic cloves, crushed
  • 12 oz orzo
  • 1 sachet Lonolife Beef Single Bone Broth
  • 4 cups water
  • 1 cup spring greens, stalks removed, leaves shredded
  • 1 cup frozen peas
  • ½ cup green beans, trimmed and cut into 2cm lengths
  • Black pepper to taste
  • ½ lemon, zested and juiced
  • ¼ cup fresh basil, chopped
  • ¼ cup grated pecorino

  1. Heat the oil in a large shallow casserole dish over a medium heat and fry the onion for 10 mins until soft. Add the garlic, fry for 1 min, then add the orzo and Lonolife Beef Single Bone Broth. Mix well to combine. Add 3 cups of the water and bring to a simmer.
  2. Stir the spring greens into the orzo along with the peas and green beans. Simmer again for a further 8-10 mins, continually stirring, gradually adding more water as you need until the vegetables are cooked and the orzo is creamy and tender. Season with pepper. Stir in the lemon juice and most of the basil and cheese.
  3. Serve in shallow bowls, scattered with the remaining cheese, basil and the lemon zest.
